Iced Pecans
2 cups pecans 1 tsp. Vanilla
extract
1 cup sugar Salt to taste
½ stick unsalted butter
1) Heat the pecans, sugar, and butter
together in a heavy skillet over medium heat, stirring constantly,
until the pecans and sugar are toasted to a golden brown…about
15 minutes. Stand back and quickly stir in the vanilla-it will splatter
a bit.
2) Immediately spread the pecans out on a large baking sheet and
sprinkle with salt. Let cool completely, and then break into small
bite-size clusters.
3) Store in an airtight container (if you don’t eat it all!)
