Coconut Macaroons

 4 egg whites
1 tsp. vanilla or almond extract
2/3 cup sugar
1/3 cup flour
3 cups coconut
dash of salt

 Preheat oven to 300 degrees.

Beat egg whites until white and fluffy.  Mix in sugar, vanilla, salt and flour.  Mix the coconut in last.   Bake for 20-25 minutes, until tops are brown.

If desired, once the macaroons have cooled, dip in melted chocolate.
