Carrot Cake with Cream Cheese Frosting

Cake:
2 cups sugar
2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 ½ cups oil
3 cups grated carrots
1 cup chopped nuts
4 eggs

Cream Cheese Frosting:
1 stick butter
½ pound cream cheese
1 lb confectioners sugar
3 tsp vanilla extract

Preheat oven to 350º. Grease a standard tube pan.
Beat eggs, oil and sugar together until thoroughly blended.
Combine dry ingredients.
Add to oil mixture and beat until combined. Stir in carrots and nuts.
Bake 1 to 1 ½ hours or until cake tester comes out clean.
Cool in pan 10 minutes.
Remove from pan and finish cooling on wire rack.

Combine frosting ingredients and beat until light.
Frost cake.
